CEREAL  BALLS

COCONUT CEREAL BALLS
                ½ cup peanut butter
                1/3 cup honey
                ½ cup flaked coconut
                2 cups of your favorite cereal
               
Put all ingredients (except the cereal) in a large bowl.
Mix well.
Stir in 1 cup cereal, mix in.
Scoop out spoonfuls of mixture and shape into balls.
Place the rest of the cereal in a bowl and roll balls in cereal to coat.
Place on waxed paper in pan and chill in the refrigerator.
 

RAISIN/APPLE CEREAL BALLS
                ½ cup raisins
                ¼ cup apple juice concentrate
                ¼ cup peanut butter
                ¼ cup low fat dry milk
                1 tsp. vanilla
                1 tsp. cinnamon
                1 cup Grape Nuts (or other dry cereal)

Heat raisins and apple juice concentrate in a sauce pan.
Boil about 2 minutes.
Pour mixture in a blender and puree.
Mix raisin puree and remainder of ingredients in a bowl.
If dry, add a few drops of water.
Let your children help you shape the mixture into small balls.
Great to eat as is, or even better, if refrigerated over night.
 

 
CARROT BALLS

                3 oz. package of cream cheese, softened
                ½ cup finely shredded carrots
                1 Tbsp. honey
                ¼ cup finely chopped walnuts
                ½ cup dry cereal
Cream together the first three ingredients.
Mix in walnuts.
If sticky add some dry cereal.
Roll into balls, then roll balls into crushed dry cereal.
